All vinegars made by Crismona come from the Montilla-Moriles region of Spain. The region is well known for producing grapes for sherry and desert wines such as Pedro Ximenez. Before being used in the preparation of the vinegar, the PX grapes are dried in the sun to concentrate their flavor. Blended with several older Solera vinegars, the resulting vinegar is highly complex but also very easily enjoyed. For a quick, and amazing vinaigrette simply combine with the Crismona Extra Virgin Olive Oil and a dollop of mustard.
