Sotolongo Balsamic Pedro Ximenez 25-Year Vinegar

The Moreno family has been making exquisite vinegars and oils since 1904 in Andalucia. The Balsamic Sotolongo vinegar is made only from grapes coming from the Montilla-Moriles region. The process for making this style of vinegar is quite elaborate and includes aging in American Oak wine barrels and then a coupage (blending) of other Pedro Ximenez vinegars and wines. It is akin to how fine sherry wines are made. The 25 year denomination comes from the specific coupage of 25 year old Pedro Ximenez wines. The entire process for making one bottle takes well over three years.
