Murcia al Vino has an interesting history. Already famous for the quality of the milk from Murcian goats, cheesemakers from the region experimented with marinating their cheese in red wine. The result is a cheese now famous for it's flavor and appearance. Marinated for three days in Doble Pasta red wine, the cheese is then aged for 75 days, imparting a sweet, smooth flavor.
