Young Queso Manchego - La Mancha D.O. Cheese

Manchego is a D.O. cheese which can be made only from the milk of the manchega sheep that graze in the provinces of Albacete, Ciudad Real, Cuenca and Toledo, all of which form the region of La Mancha. The pattern on the rind comes from a time when the cheese was wrapped in sheets of woven esparto grass. This Manchego is made from pasteurized sheep's milk, and aged in natural caves for four months. The flavor is buttery and smooth.
