The origin of dish is debated but one fun story involves a mistake by monks who were awaiting the arrival of the Bishop. They wanted to prepare a flan but ended up instead with something very soft, and creamy. To disguise the mistake, the monks covered the dish with sugar and branded it with a cross. When the Bishop tasted the dessert he exclaimed "Crema" which means burn in Catalan!
