Jamon Iberico "Pata Negra" - Bone-in Whole

Pata Negra - The Iberian "black-footed" pigs are the source for the famous "Pata Negra Ham". The Iberico pigs live freely on the land and have  a rich, hormone free and antibiotic free diet. The hams are hand rubbed with sea salt,  and air cured for 18 months resulting in a heavily marbled rich flavor. The exterior fat turns gold while the exposed meat develops natural molds, lending distinctive flavors to the meat. 

The bone-in ham has tremendous flavor. Although slicing Jamon perfectly is an art, the novice can do a fine job, with the right tools - a sharp, flexible knive and a ham stand. In Spain, some homes simply hang the ham from a rope in the kitchen. We recommend the Jamon stand :)
