Paella is perhaps the most famous dish of Spain, and with good reason. The flavor of the broth, infused in to the rice, which takes on many textures, is truly unique. On top, the rice will be slightly chewy, in the middle, it tends to melt in your mouth, and on the bottom, if you are really an expert paella maker, you will have the socarrat, a crispy finish enjoyed by Spaniards.
